Pumpkin Oat Cookies

I originally found this recipe on http://www.grouprecipes.com, posted by “bunnypony”. I liked the base of this recipe but, by me being me, I didn’t plan my baking and just was trying to “use what I had”. So, I had to make substitutions! I also use butter as I don’t like using the so called “healthy oils” like vegetable oil or Canola oil. I find that these are too processed and actually have a funny taste to me. So I have listed the recipe below, with my own substitutions. Hope you give it a try and find it as yummy as I do! Remember, in place of butter you can substitute applesauce, and in place of raisins you can add nuts! Get Creative!




2 C whole wheat flour

1 1/3 C oats

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

2 Tbsp molasses

1 tsp pure vanilla extract

1 2/3 C sugar

1 C pumpkin puree’

1/2 stick of butter melted


Mix all ingredients together and bake at 350 on lightly greased tray. I used silicone mats for baking on my trays to prevent sticking, without having to grease trays. Bake for approximately 16 minutes, for chewy cookies.
